manyyearsofreliableserviceifyoufollowthesimpleoperationandmaintenanceproceduresinthis
manual.Containedinthismanualarethegeneralinstallation,operation,andmaintenanceprocedures
fortheuniversalfryerModels45C+and35C+.
1.1 WHICH FRYER DO I HAVE?
Therearetwomodelsofthisgasfryeravailable. Eachfryerhasitsownmodelnumber. Tofindout
whichmodelyouhave,lookinsidethedoorattheequipmentidentificationplate. Thisplatehasalot
ofusefulinformation,buttoidentifywhichfryeryouhave,lookatthemodelnumberblock. Themodel
numberidentifieswhichfryeryouhave. Abriefdescriptionofeachmodel isprovidedinTable1-1.

1.2 CHECKING YOUR NEW FRYER
Yournewfryerhasbeencarefullypackedintoonecrate. Everyefforthasbeenmadetoensurethat
yourfryerisdeliveredtoyouinperfectcondition. Asyouunpackyournewfryer,inspecteachofthe
piecesfordamage. Ifsomethingisdamaged,DONOTsignthebilloflading. Contacttheshipper
immediately,theshipperisonlyresponsiblefor15daysafterdelivery.Checkthepackinglistenclosed
withyourfryertoensurethatyouhavereceivedallofthepartstothefryer.Ifyouaremissinganyparts,
contactthedealerfromwhomthefryerwaspurchased. Asyouunpackthefryerandit'saccessories
becarefultokeeptheweightofthefryerevenlydistributed.
CAUTION
Topreventequipmentdamage,don'ttiltthefryeronto
anytwoofit'scastersorpulltheunitbythefluevents.

LocateyourPitcoFrialatorwarrantyandfillintheserialnumberofthefryerandthedatereceived. You
willfindtheserialnumberontheplateinsidethedoor. Putyourwarrantycardinasafeplaceforfuture
reference. DONOTreturnthecardtoPitcoFrialator.
1.2.1 CheckYourOrder
Thecratecontainingthefryerunitwillalsocontainthefollowing:

1.3 ASSEMBLY AND LEVELING
Whenyoureceiveyourfryer,itiscompletelyassembledwiththepossibleexceptionofthelegs(or
casters)andtheheatshield. Insomecases,ifyouhavepurchasedamulti-fryerunit,youmayneedto
assemblethesystem.
1.3.1 Leg/CasterInstallationandAdjustment
Installingthelegsandlevelingthefryerisdonewitha7/16"wrench,socket,andalargepairofwater
pumppliers. Thelegs/castersmustbeinstalledtoprovidethenecessaryheighttomeetsanitation
requirementsandassureadequateairsupplytotheburner.Attachthelegsbyperformingthefollowing
procedure.
a. Laythefryeronitssidebeingcarefulnottodamagetheflue
by pulling on it. Protect the outside of the fryer with
cardboardoradropclothwhenlayingitdown.
b. Attacheachleg/casterwiththehexheadcapscrewssup-
pliedwiththefryer. Eachleg/casterrequiresfour1/4-20x
5/8"capscrews.
c. Mountthescrewsfromtheinsideofthefryerwiththenut
ontheoutside. Thenutshavelockwashersattachedto
them,thereforeitisnotnecessarytouselockwashers.
d. Whenallfourlegs/castersaremounted,standtheunitup
beingcarefulnottoputtoomuchweightonanyoneleg/
caster.Adjusttheheightandlevelthefryerbyadjustingthe
levelingdevicesontheleg/casterwiththewaterpump
pliers.
e. Onunitswithcasters,movethefryertothedesiredlocation
andlockthewheelsusingthelockingdevicesonthesides
ofthecasters.
